In practice, not much — same venue, same programme. The difference is the occasion: a staff outing is usually a thank-you for your own crew, a corporate event more often a programme with clients or a team goal attached. Tell us which it is and we'll set it up that way.
Nearly everyone. Free roam asks that you can walk for half an hour; racing and the arcade don't. Anyone who'd rather skip the headset watches on screen — and that's not second best here, because the arena is just as good to follow from outside.
